Osso Buco is a dry-aged beef shank that is cross cut with the bone in. “Osso Buco” means “hole of bone” because this cut of meat contains marrow which provides the decadent, rich flavor when braising. 
 
Sullivan Family Farms meat is pasture raised right on our farm and is never treated with antibiotics or hormones.
