Bavette Steak is a cut of beef that many people aren't familiar with so it doesn’t get near the glory it deserves.  Part of the reason is that it gets confused often with flank or skirt steak.   Bavette steak, also known as flap steak, comes from the sirloin primal of a steer (extremely close to where a flank steak cut comes from) . This cut allows the beef to soak up seasoning and marinade.  When cooked and sliced properly, it’s a tender and delicious cut – and a  go to for fajitas.


Sullivan Family Farms meat is pasture raised right on our farm and is never treated with antibiotics or hormones.
